Hello, dear readers!
I’m back after an unintended mini-hiatus that happened because I have been “shopping and chopping” and creating new recipes.
(Well, I also celebrated my birthday with my husband and our friends here at a fun holiday house party. But hey, everyone needs some time to cut loose and relax with loved ones. I held to a strict plant-based diet, even though some of it was not “whole-food,” yet I did minimize those foods. Forget about the Brut Rosé Champagne and artisan red wine!)
Meanwhile, we’ve already had Thanksgiving here in the US, and Christmas is nearly upon so. Holidays mean big, multi-course meals. Check out this week’s cooking/prep schedule for my current offerings for those two celebrations:

Coconut Bacon!
I knew a few weeks ago that I wanted to test a Coconut Bacon recipe, but I decided on a whim to make this yesterday. So, I had to make a couple of substitutions since I didn’t have all the listed ingredients in her recipe.
I did have large-flake organic coconut (main ingredient for my inspiration!).
However, I substituted agave syrup for the maple syrup; Bragg’s Liquid Aminos for the soy sauce; and two quick spritzes of macadamia nut cooking spray for the tablespoon of vegetable oil. (Also, real coconut has plenty of fat, so I didn’t feel it necessary to add more.) I always have high-quality Stubb’s brand liquid smoke on hand. So I was good to go with my recipe test.
Here is how it turned out: Dark and crispy and smelling like a real Southern smokehouse!
It is absolutely delicious. I’m going to add some to tonight’s dinner salad.
My VVV clients are picking up their nine-course Christmas Dinner on Saturday, and they’ll get the Coconut Bacon as a surprise! They can add it to their salad or the Lemony Garlic Green Beans . . . or BOTH!
